The Japanese Sake
by Tsunan Brewery
KIGI
“KIRI-NO-TOH” is refined Japanese sake made by Tsunan Jouzou brewery located in Echigo-Tsumari where the Triennale takes
place. In the brewery, they use crystal pure water from melting snow on the 2,000-meter mountain range,
which is highly acclaimed for its fine texture and mellow taste, selected as one of the best 100 natural
waters in Japan. Tsunan Jouzou fully embraces the bounty of nature in Tsunan Town, such as locally grown
rice, and tries to best incorporate the natural ingredients into their craft. Their sake is often described
as “sharp and crisp, yet having a developing flavor,” “smooth texture with a clean finish.” Here, we
proudly present four types of sake based on signature bottles of Tsunan Jouzou, “KIRI-NO-TOH” and “TSUMARI-GOH”
and redesigned by KIGI as special YOIGOMA editions for this Triennale. Please enjoy with YOIGOMA sake
cups introduced by D-BROS.
